Grand Cayman's capital has mostly been a place travellers pass through — cruise gangs, a spot of duty-free, maybe lunch by the harbour before heading to Seven Mile Beach. That changes with ONE | GT, a new hotel now open on Goring Avenue that wants you to actually stay in George Town.
The headline feature is exactly what it sounds like: a rooftop infinity pool floating above the capital, with the Caribbean stretching out to the horizon. Come late afternoon it turns into a cocktail and dinner spot, courtesy of BYŪ, the rooftop restaurant serving Asian-inspired food — sushi, sashimi and robata-grilled dishes — with the view thrown in.
There's a second pool too. The third-floor Oasis Pool gives guests a quieter lounger option, which matters in a hotel whose other selling point is being surrounded by an actual working town rather than a resort strip.
The rooms are built for longer stays rather than quick overnights. Every unit is a suite with a kitchen, a separate living area and a private balcony or patio, and selected rooms add laundry facilities — handy if you're settling in for a week or mixing business with a holiday. That flexibility cuts both ways: cook breakfast at your own pace, or keep a few beers chilled after a day out.
The hotel doesn't restrict its dining to guests. Three venues are open to everyone: Perle, doing French-Mediterranean food with a seafood-forward menu and an open kitchen; Café Bellini at ground level for coffee, house-made pastries and lighter bites; and BYŪ up top. It makes the hotel usable across a whole day — coffee before heading out, a swim after sightseeing, dinner reservations that pull you back in the evening.
The town-hotel trade-off, of course, is beach access, and the hotel covers that with a complimentary shuttle to Seven Mile Beach, complete with chairs, towels and bags. George Town's waterfront, shops and restaurants are on the doorstep, and business travellers get a rare combo: a meeting downtown, a rooftop swim after, and a room that works if the trip stretches into the weekend.
On the booking side, ONE | GT is affiliated with Small Luxury Hotels of the World and also listed through Hilton. It's worth comparing which perks attach to each channel — Hilton points and SLH benefits don't always overlap — before locking in a rate.
For anyone who has written off Grand Cayman as a beach-only destination, this is a new template: a walkable capital address, serious dining in-house, and the island's best-known beach a short shuttle ride away.
