September brought a fresh wave of hotel openings, and the crop is unusually varied — a design-led Aegean escape, a Nordic wellness retreat with its own five-season calendar, and Madrid's first Nobu among them.
The most romantic of the lot might be Nírema Hotel & Spa Samos, a new MGallery property on the Greek island of Samos. The name comes from the Samian word for 'dream', and the setting backs it up: 72 rooms look out over Vathy Bay and the vineyard-covered Ampelos mountains, eight suites come with private pools, and guests get a dedicated beachfront strip right on the Aegean.
In Mexico, Viceroy Los Cabos has undergone more than a facelift. The resort, where Baja's desert mountains meet the Sea of Cortez, has been reworked to add warmth and variety to the guest experience while keeping the white architecture, reflecting pools and water-and-light interplay that made it famous. Expect the same destination-driven dining and a quieter side of Cabo than the marina strip.
For something genuinely different, head to Hiiumaa, a remote Estonian island in the Baltic, where the new Eha retreat programmes its year around five seasons — including 'Springrise', a transitional period between winter and spring designed for recalibration. It's a soulful, sustainability-first take on Nordic wellness, surrounded by pine forest and sea.
Denmark gets a boost too: CORI Hornbæk Hotel sits right on the beachfront in Hornbæk, the dune-backed seaside town 40 minutes from Copenhagen that has long attracted the capital's creatives. Designed by Afroditi Krassa (the designer behind projects for Rosewood and Harrods), it has 77 rooms and suites plus five townhouse apartments, and joins the Leading Hotels of the World collection. Soft white sand and calm, swimmable water are steps away.
Stateside, Oyster Estate opens in Greenport Village on Long Island's North Fork — a 34-key boutique conversion from Blue Flag Capital with interiors by Islyn Studio. It borrows from the region's historic bay houses: clay and weathered-green palettes, dried local flowers pressed into lobby tiles, a hay-plaster ceiling echoing the salt marshes, and ceramics from a local maker. The North Fork's vineyards are a short drive off.
Spain scores twice. Nobu Hotel Madrid brings the brand's Japanese-inflected dining and design to the capital for the first time — 50 rooms in the Las Cortes district, a cocktail bar in the vaults of the building's former bank life (safety deposit boxes retained), and a seventh-floor rooftop for sunset drinks. Meanwhile Barceló has opened Murcia's first five-star hotel, Palacio San Juan, a Royal Hideaway property restored from the historic Palacio de Floridablanca by local architect Jesús Zafra, balancing heritage features with a contemporary feel.
Why it matters: autumn shoulder season is prime time for trying new hotels — rates are softer, and properties often roll out opening offers in their first months. Beach-focused picks like Samos and Hornbæk work best now or next spring; Eha, Madrid and Murcia are made for cooler-weather city and wellness trips.
