A slice of Latin America has landed on the Hua Hin shoreline. Nómada Open Fire Grill & Beach Club at Dusit Thani Hua Hin has rolled out Nómada Fiesta, a monthly evening billed around open flames, cocktails and dance — held on the first Friday of each month from 6pm.

The centrepiece is a tableside churrasco service led by Peruvian chef André Josef Nweh Severino, who carves freshly grilled meats to order and leans on the cooking traditions of his homeland. If you'd rather play chef yourself, there's the option to pick your own steak and seafood and grill it over the open flame. Less ambitious eaters can head straight to the ready-cooked spread, which covers white prawns, calamari, Argentinian chorizo, picanha, Peruvian-style chicken and baked fish in a salt crust.

Carb lovers get a pasta station with a twist: a Peruvian pesto that swaps basil for spinach and coriander, plus a Chilean sauce with a bisque-like flavour. Dessert is deliberately unfussy — coconut flan or an ice cream cone loaded with toppings.

Beyond the food, the fiesta comes with a live DJ, cocktails by the sea and dance performances from Hua Hin Dancesport Academy. After a drink or two, guests are pulled into a mini dance class, so even the shyest diners end the night moving. Pricing includes one drink, and Dusit Gold members get 10% off food.

If you can't make the first Friday, Nómada runs a separate fire show over the adjacent lake every Saturday night during à la carte dinner service — worth timing an evening around if you're staying in town.
