If you needed an excuse to book a trip to Thailand this November, the country's hotel and restaurant scene just gave you several. A wave of guest-chef collaborations, seasonal menus and one-off events is rolling out across Bangkok, Phuket, Samui and Chiang Mai — mostly within a tight window from early November through January.

The headline acts are the chef pairings. At Khum Hom in the Mövenpick BDMS Wellness Resort Bangkok, French chef Nicolas Isnard rejoins Ian Kittichai for the final "Four Hands Culinary Journey" of the year, a nine-course dialogue running Nov 19-21 with a six-wine pairing. Park Hyatt Bangkok goes a different route on Nov 14 with "The Impossible Reservation", pairing Cross Restaurant's Kuntika Pleeramongkol with Seasoning 36's Akkaradet Techakeseree, plus desserts from Chulaphat Taptagaporn. The evening opens with interactive masterclasses — XO chilli sauce, Thai-style chilli jam, madeleines and gelato — before a multi-course dinner. And over at Uno Mas in Centara Grand at CentralWorld, two Andalusian chefs, Álvaro de la Puerta and Borja Terry Borrego, team up for a six-course Spanish menu built around the restaurant's Basque-style grill.

Phuket gets its own showpiece. The Slate Phuket's "Bold" series brings in chef Thanarak "Pom" Chuto on Nov 20-21 for two very different nights: "The Emperor's Table", a formal imperial Chinese dinner at Rivet, then "Shanghai After Dark" at Coolies Club in Old Phuket Town — old-Shanghai glamour with shared plates, cocktails, live music, mahjong and performances, all riffing on the Chinese flavours that shaped the island during its tin-mining era.

Wine lovers have options too. Kimpton Maa-Lai Bangkok hosts a Burgundy dinner at Ms.Jigger on Nov 13: five courses with winter black truffles matched to Maison Lou Dumont wines, hosted by Enoteca Thailand's CEO. At The St. Regis Bangkok, truffle season runs until Jan 31 at Viu, with Piemonte black truffles folded into everything from wild mushroom soup to Wagyu tenderloin, plus a mushroom-themed Sunday brunch through November. The same hotel pours a European winter afternoon tea in The Drawing Room until the end of January, complete with a mignardises trolley.

Beyond Bangkok: Pagoda at the Bangkok Marriott Marquis Queen's Park is cooking Phuket lobster and Krabi tiger prawns to order until Nov 30; Meliá Chiang Mai launches a Spanish-inspired "La Vida Dulce" afternoon tea with Doi Suthep views until Jan 31; and Roukh Cuisine at Roukh Kiri Khaoyai pairs barbecue, cold cuts and cheese with wine in Khao Yai's hills.

If wellness is your draw rather than food, Banyan Tree Samui runs a one-hour New Moon Sound Healing Ceremony on Nov 8 with gongs, singing bowls and breathwork, while Sindhorn Kempinski Bangkok hosts a Thai-Ayurveda-meets-Western wellness residency until Nov 30.

One further reason to look ahead: Uzbekistan's Silk Road city of Bukhara — a Unesco World Heritage Site and Creative City of Crafts and Folk Art — will host the Unesco Creative Cities Network annual conference in 2027, timed with the second Bukhara Biennial from Sept 3 to Nov 21 that year. Worth a calendar note for culture-focused travellers planning far ahead.
