Chef's table obsessives, clear your calendars for mid-November. Restaurant Gordon Ramsay on Royal Hospital Road is hosting its first four-hands collaboration since Kim Ratcharoen became chef de cuisine, and it's a big one: three days only, November 12-14, cooked alongside Tam Chudaree Debhakam, the force behind Bangkok's two Michelin-starred Baan Tepa.

Chudaree Debhakam is a genuine headliner. She was named Asia's best female chef last year and first made her name as the youngest-ever winner of Top Chef Thailand. Baan Tepa holds both two Michelin stars and a Michelin Green Star, a nod to its sustainability credentials. Her London connection runs deeper than a booking — she has said Restaurant Gordon Ramsay was the first fine dining room she visited as a student in the UK, so this is a homecoming of sorts.

On the other side of the pass is Ratcharoen, who arrived at the Chelsea restaurant as an apprentice in 2015 and worked his way up to chef de cuisine. Born and raised in Thailand with classical French training, he's the obvious bridge between the two kitchens. The pair promise a menu rooted in tradition but executed with French precision — Thai ingredients and flavour profiles channelled through fine dining technique.

Access is deliberately tight: just five sittings across lunch and dinner over the three days. Evening diners get the full production — five canapés, an amuse-bouche, a six-course tasting menu and five petit fours. Dishes confirmed include kanom krok reimagined with crème fraîche and caviar (the classic Thai coconut pancake given the caviar treatment) and turbot paired with Kaeng Som, turmeric and kachai, a nod to the sour, fiery southern Thai curry.

Bookings are open now, starting from £250 (roughly $335) per seat. For a one-off menu from a two-star Thai kitchen landing in one of London's most established fine dining rooms, that's in line with what the city's top tables already charge — and these seats won't be around long.
