Milaidhoo Maldives is bringing in Chef Laurence Tan, Head Chef of Singapore's Michelin-starred JAG, for a short culinary residency this October, and it's part of a much bigger pattern of star-chef programming across the atolls this season.
Tan's route to the top is a classic kitchen climb. Cooking first caught his attention in his parents' home kitchen, then culinary school, followed by stints at The White Rabbit from 2016 and Tower Club before he landed at JAG in 2020. Working under Chef Jeremy Gillon, he moved from Chef de Partie to Sous Chef, and when Gillon took on a consultancy in Taiwan, Tan took over the kitchen. The restaurant held onto its Michelin star in 2026 under his leadership.
Guests at Milaidhoo get two ways in. On 16 October, Tan runs an intimate cooking class covering his approach to ingredients, technique and flavour. The next evening, 17 October, he hosts a five-course dinner capped at just 16 seats. The menu reads like a highlight reel: Hiramasa crudo with tomatoes and sea grapes, Gambero Rosso with Jerusalem artichoke, lobster ravioli with bisque, and Tajima Wagyu MB8 tenderloin with black autumn truffle, closing on a dark chocolate parfait with buckwheat ice cream. A leek and potato croustade opens the night, with preserved lemon sorbet between courses.
Milaidhoo isn't the only island making a case for a food-motivated trip. V Villas Maldives at Mirihi is flying in Executive Chef Pisut 'Nong' Nahan and mixologist Mongkol 'Lek' Saengchud from its Phuket sister property for a Thai pop-up on 10 and 11 October, 'From the Andaman to the Indian Ocean', with dishes like Royal Massaman Croquette and Siam Betel Crab and cocktails built around a sweet-sour-bitter 'triangle' method.
Park Hyatt Maldives Hadahaa has gone bigger still, announcing a season-long Masters of Food & Wine Series running October 2026 through April 2027. Six Michelin-starred chefs each anchor a chapter tied to the calendar: Cantonese master Ku Chi Fai of Beijing Kitchen opens during Golden Week (2 and 5 October), followed by Tuscany's Andrea Mattei at Christmas, La Villa Lorraine's Ruben Christiaens for New Year, Germany's Michael Dyllong in late January, Corsica's Richard Gabriel Toix for Easter, and French chef David Hemmerlé to close in April.
And from 25 October to 3 November, Alila Kothaifaru hosts Joshua Acquaviva, Head Chef of Park Hyatt Milan's Pellico 3, for a ten-day residency at its beachside Italian restaurant, Pibati Sul Mare — expect pasta and pizza with Neapolitan roots behind them.
For anyone whose holiday decisions hinge on the dining room, this is a rare concentration of talent in one country, and some events — especially Milaidhoo's 16-seat dinner — will fill fast. Book well ahead.
