Palm Jumeirah's dining scene is getting a jolt of island energy. SAONA, a new Caribbean-Peruvian restaurant, opens this December on the first floor of voco Dubai The Palm at Palm West Beach, and it's shaping up as much a nightlife spot as a dinner reservation.

The name comes from Saona Island in the Dominican Republic, famous for its pale sand and slow pace, and that laid-back Caribbean spirit is the whole concept. The space seats 244 guests across a main dining room, a VIP lounge, casual lounge seating and outdoor areas, all dressed up with warm lighting, layered textures and the sort of vibrant, colour-forward interiors you'd expect from a venue borrowing from island culture. Music is built into the plan too, with DJ sets and handcrafted cocktails carrying the night well past dessert.

The kitchen is led by Jamaican-born Executive Chef Richie Richards, who brings more than two decades of international experience, including time at Miss Lily's, one of Dubai's long-loved Caribbean institutions. His menu promises Caribbean ingredients and traditions reworked through modern Peruvian techniques — a pairing that makes sense on flavour alone, given how much the two cuisines share: seafood, citrus, chilli, and a talent for bold marinades. The full menu hasn't been revealed yet, so early guests will be eating at the frontier of whatever he's come up with.

For travellers, this slots neatly into Dubai's winter sweet spot. December is peak season on the Palm, when the beach weather is perfect and every hotel on the crescent is rolling out new openings. SAONA gives visitors to voco Dubai The Palm — and anyone strolling Palm West Beach — a fresh option that's neither another steakhouse nor another Italian, which is genuinely refreshing in a city that has plenty of both. The mix of dinner, DJs and a VIP lounge also means it works for different trip styles: a proper dinner with friends, a celebratory night out, or a private booking if you're travelling with a group.

Practically speaking, it's easy to reach. Palm West Beach sits on the trunk of Palm Jumeirah, walkable from several hotels and a short taxi ride from the Dubai Marina and Media City areas. Follow @saonadxb for the confirmed opening date and menu drops as December approaches.

If you're heading to Dubai this winter and want one evening that feels like a holiday within your holiday, a Caribbean-Peruvian dinner with the beach on one side and a DJ on the decks is a decent bet. — What's On Dubai
