Over in the Northern Quarter, Adhoc started life in 2020 in a former art gallery, more bottle shop than bar, and has gradually shifted towards pouring on site. Run by Miles Burke and Charlie Heyes, it focuses on next-generation wines from small independent, organic and biodynamic producers — the sort of labels you won't find in a supermarket aisle. Prices are fair, the window seats are prime for people-watching, and they run tasting events on themes like terroir. Bought a bottle you loved? They'll deliver.
Blinker, in the old banking quarter of Spring Gardens, is the grown-up of the trio. Founder Dan Berger, previously of The Ned and Gordon Ramsay Restaurants, named it after a lesser-known bourbon, grapefruit and raspberry cocktail — and seasonality drives the list. Think a bourbon Blackberry Sour with an egg-white lift, a blackberry, ginger and lemon whisky highball, or the Grapevine, a vodka drink with apricot, apple, grape and a Champagne top. What sets it apart is restraint: fruit without sweetness overload, and genuinely well-built Martini and Old Fashioned menus. The Breville toastie is a proper snack, not a token one. Berger also opened The Morris in the Northern Quarter in 2025 if you want a second stop.
