A one-time farm in Menorca's untamed north has become one of the Balearics' most considered new hotels. Vestige Binidufà, which opened in April 2026, sits on 800 acres of rolling hills about 45 minutes from Mahón airport and 20 from Ciutadella, and it's the latest restoration from Spain's Vestige Collection, sister property to nearby Son Ermità.
The heart of the estate is an 18th-century finca, and the restoration is unusually scrupulous: stonemasons, specialist carpenters and ancient stone-cutting techniques were brought in, gates were carved from single olive trees, and most furniture was custom-made for its exact spot. Artwork comes from local creators, with antiques mixed among bespoke pieces. At the centre is an infinity pool ringed by olive and almond trees and wild Mediterranean herbs, next to a dry-stone bar and restaurant with blond Scandinavian-style furniture.
There are just 11 rooms and suites, done in muted plaster and terracotta with exposed stone, original beams and rustic farmhouse floors. Bathrooms are a highlight: poured-concrete freestanding tubs, statement zellige tiles, pewter fixtures and organic amenities from Rowse. Every suite gets a balcony, terrace or small garden.
Food is fully plant-based with a Middle Eastern lean, at both the pool bar and Mesura restaurant, which overlooks the pool and valley and gets atmospheric after dark. Standouts include grilled avocado with marinated tofu and coriander pesto, pumpkin with hummus and Kalamata olives, and a confit tomato tatin. Omnivores can add estate-reared meat or fresh-caught fish. Breakfast is a tight continental spread of local cheese, charcuterie, local honey and pastries — plus a sobrasada-on-toast-with-honey dish worth ordering twice. The wine list favours local and regional Spanish bottles, and cocktails riff on the island's pomada (Mahón gin with cloudy lemonade).
Practically speaking, you'll need a car. The estate has its own red-sand cove, reached by golf buggy and occasionally shared with nesting turtles, while more conventional south-coast beaches are 15 minutes away. The 185km Camí de Cavalls coastal trail passes nearby, and the hotel arranges guided hikes, bike rides, horse riding and a Ciutadella art tour for a fee; yoga is free several days a week. Guests can also use Son Ermità's facilities — two pools, a clifftop stargazing spot and a sea-view gym — a ten-minute buggy ride away.
It's family-friendly without being kid-centric: cots, futons, high chairs and adaptable children's menus are available, and there's an unshaded but tasteful wooden play area behind the pool. One room is fully adapted, ramps can be added on request, pets aren't allowed, and check-in runs 3pm to noon checkout. Rates start around £541 per room.
Who's it for? Design-conscious couples who want peace, walking trails and serious food rather than nightlife — the reviewer's verdict names party people as the wrong fit, and singles out the hotel's regeneration and sustainability credentials as its best quality. If your idea of a Balearic break is boutique rather than beach club, this is a strong new reason to pick Menorca.
