Bangkok's food scene moves fast, and a fresh round of openings is giving travellers plenty of reasons to book a table before the crowds do.
Headlining the list is Kwantip – Samrub Thai Dining, from chef ML Kwantip "Pom" Devakula. The restaurant is built around the samrub tradition — a full Thai meal where every dish arrives at once, and diners balance spicy, sour, salty and sweet in their own rhythm rather than following a set course order. The recipes are genuinely heirloom: Central Thai palace cooking from Devavesm Palace via her grandmother, and southern dishes from Thung Song via her mother. Her son, chef Air Kulapol Samsen, works alongside her, and the kitchen isn't afraid of luxury imports — expect Japanese wagyu, ama ebi, caviar and uni folded into traditional Thai technique.
In Yaowarat (Bangkok's Chinatown), Restaurant Rosa takes a wildly different approach. The room is almost entirely white — crisp tablecloths, industrial minimalism, daily-refreshed botanicals — and there's no conventional menu and no head chef. It's "Crossroads Cuisine": a progressive tasting experience where each course is hinted at with a single word, drawing loosely on Thai, Chinese, Indian and Western influences.
For drinks, Aela Social Bar has opened in the Fairmont Bangkok Sukhumvit under beverage manager Alexander Falcetelli Makarov, whose career spans Europe and the Middle East. The concept, "A Journey Through States", sequences guests through four sensory chapters — Arrival, Orientation, Ground and Release — with four signature cocktails per stage.
South in Phuket, Pru at Trisara reopened on October 1 after a renovation, with chef Jimmy Ophorst keeping the community-to-fork ethos alive. Its 10th anniversary runs October 27 to November 1: six collaborative dinner chapters with guest chefs from across Asia, capped by the Farm Festival at Pru-Jampa Farm — 12 food booths, workshops, a kids' zone and producers like Trang Pepper, Kad Kokoa and GranMonte. Also back: Ciao Terrazza at Mandarin Oriental, Bangkok, reopened October 23 with Venetian-leaning dishes from chef Emanuele Bergamo, including a cicchetti-style beef tartare and charcoal-grilled lamb rack. And until January 31, 2027, pastry chef Saki Hoshino is turning GranMonte wine-country ingredients into desserts at Sàat — think Chenin Blanc jelly and grape-leaf sorbet.
If you're more active than gluttonous, Road To Give Phuket 2026 lands on November 15 at Bang Wad Dam, with 4km, 12km and 1.8km pet-friendly charity runs benefiting the Asia Center Foundation. Wellness seekers can also try the new Alanna Wellness & Spa in Laguna Bangtao, whose "Thermal Journey" cycles five heat and water environments, launching a northern-Thai-inspired signature ritual on November 1.
Why it matters: these openings reward early visits. Kwantip and Rosa offer genuinely distinct takes on Thai dining that most itineraries haven't caught up with yet, while Pru's anniversary week is a one-off chance to eat food from a dozen celebrated chefs in a single festival setting.
