On October 21, the 51st floor of The St. Regis Dubai, The Palm hosts a one-night-only dinner that puts two chefs from very different culinary worlds at the same pass. Sushisamba — the Palm tower's skyline Nikkei spot — is teaming up with Girl & The Goose for a single evening of collaborative cooking, and bookings are open now.
The line-up is the draw here. Girl & The Goose is Chef Gabriela Chamorro's restaurant, known for Nicaraguan and broader Central American cooking — she was also named What's On Chef Of The Year 2026. On the other side is Chef Kyung Soo Moon, who leads the kitchen at Sushisamba and is behind Dubai venues like Hanu and Attiko. Their joint menu runs à la carte and smashes Japanese-Peruvian technique into Mesoamerican flavour: think open-fire grilling, citrus-heavy ceviches and familiar Nikkei signatures given a Latin American spin.
The dishes announced so far give a decent sense of the price range and ambition. A yellowtail aguachile ceviche starts things at Dhs99, while the A5 Wagyu tataki sits at Dhs129. Grilled sweet prawns come in at Dhs169, miso black cod — a Sushisamba classic — at Dhs175, and dessert is a Caribbean coconut flan for Dhs51. Bookings are being taken through the Sushisamba website, and given it's a single-night event in a penthouse venue, it's the kind of thing that tends to fill up fast.
For travellers, this is a useful reminder that Dubai's dining scene now rotates on a calendar as much as a map. If you're in the city in late October and want something that won't be there next month, this is exactly that — a fusion of Nicaraguan and Nikkei cooking you won't find on any regular menu, served from a 51st-floor perch with views over Palm Jumeirah. Even if you miss the collab, both restaurants stay on the list: Sushisamba for the scene and the skyline, Girl & The Goose for what is arguably one of the most interesting Latin American kitchens in the UAE right now.
