A Michelin-recognised Thai restaurant is temporarily swapping Chiang Mai's Old City for a Maldivian atoll. From 4 to 6 November 2026, The House by Ginger — a fixture of the northern Thai dining scene since 2004 — will take over kitchens at Heritance Aarah in Raa Atoll, with Chef Aree leading a three-day programme of dinners, demos and street food.
The restaurant's backstory is half the appeal: it operates out of a restored heritage house built in 1937, and its cooking is rooted in doing things from scratch and honouring the regional stories behind familiar Thai dishes. That philosophy translates into a packed schedule on the island.
Things open on 4 November at Ralu with a Thai à la carte night covering the greatest hits — chicken satay with peanut sauce, som tum, green curry, seafood hor mok, cashew chicken, pad Thai and mango sticky rice. The tone shifts on 5 November to a five-course wine pairing dinner that leans contemporary: think crab pani puri with coconut citrus sauce, Burmese tea leaf salad with soft-shell crab, Tom Yum lobster bisque, and a choice of beef Massaman with garlic mashed potatoes or grilled sea bass in Tom Kha sauce, closing with lemongrass panna cotta and tropical fruit. Chef-led demonstrations the same day break down Tom Kha, pad Thai and green curry for anyone keen to recreate them at home.
The finale on 6 November loosens up with a Thai street food evening — live cooking stations dishing out satay, spring rolls, Khao Soi, seafood Tom Yum, Massaman curry and, inevitably, more mango sticky rice.
It's one of several food-driven reasons to look at the Maldives this November. Over at The Nautilus, award-winning pastry chef Elena Nabiullina — named Pastry Chef of the Year 2024 by WHERETOEAT and founder of the CREAMO gelato brand — runs a residency from 7 to 12 November, including a dessert masterclass and a signature ring-shaped Bublik served to every guest on the island. In the capital, Barceló Nasandhura Malé hosts Ministry of Crab, the Sri Lankan institution from chef Dharshan Munidasa, at its B.Heaven Rooftop on 13 and 14 November, flying in fresh Sri Lankan mud crabs and freshwater prawns under the restaurant's strict no-freezer policy. And Kuda Villingili Resort in North Malé Atoll has just earned a spot in the MICHELIN Guide's 2026 hotel selection.
For travellers, the takeaway is that a Maldives trip no longer has to be purely about the beach and the buffet. If Thai food is your thing, booking Heritance Aarah around those early-November dates gets you a taste of one of Chiang Mai's best-loved restaurants without leaving the Indian Ocean — with everything from casual street-food nights to a dressed-up wine dinner on the same itinerary.
